Fall is here! We went from 80 degree weather to blustery rainy days in a week. The leaves are falling off the trees and the fireplace is lit. It's time for soup!
One of my favorite soups has always been split pea with ham. That being said, my daughter is vegan so I decided to change up my recipe a bit and make a version she could enjoy.
Split Pea Soup
- 3 cups split peas, rinsed
- 4 cups vegetable broth ( I used the Pacific organic brand)
- 2 cups filtered water
- 4 stalks celery, chopped
- 4 carrots, chopped
- 1 cup chopped cauliflower
- 1 white onion, chopped
- 1 tablespoon sea salt
- 1 teaspoon black pepper
I put all the ingredients in my Instant Pot on the manual setting for 30 minutes. Easy peasy. However, if you don't have one of these amazing kitchen appliances then you can cook everything in a crockpot for 5-7 hours. The variance in time depends on the crockpot you use. I have one that truly seems like a slow cooker and one that low setting is really high. Stove top method has you bringing everything to a boil and then simmering for several hours. I wish I could tell you exactly how long but my Instant Pot has me completely spoiled, I very rarely cook soup on the stove anymore.
While my version of split pea soup is vegan, you can cook it up with a ham bone for some additional flavor.
Want a little more zing? Sprinkle some cayenne pepper on top before serving.
